This recipe is same as my Hawaiian couscous but more plant protein filled (lentils, broccoli and green peas) . Very quick . Very easy as usual and very yummy 😋😋
YIELD 4 servings
Ingredients For Coconut couscous
1 1/4 cups couscous
1/2 cup water
1 tablespoon olive oil, optional
1 cup coconut milk
Greeny frozen broccoli and peas
Handful of lettuces
slices of cucumbers
1/2 cup green lentils
2 garlic cloves
1 small onion chopped
Bring water and coconut milk to a boil on low-medium heat for 3 to 5 mins . In a mixing bowl, place couscous, oil and a pinch of salt ,pour the boiling liquid over and mix well, let sit for 10 minutes. Stir in microwaved or steamed vegetables .
Cook lentils with onions and garlic cloves with a pinch of salt in 1 cup water for 30 -45 minutes or until lentils are soft. Add in more water if necessary. Drain out excess water if any from cooked lentils. Stir in lentils mix (garlic and onions) into the greens couscous mix 😋😋. Mix well and serve or garnish with lettuces and cucumbers ! Yum yum !!!
