Hawaiian Couscous

I went on a weekend getaway with my husband to Hawaii over the weekend and enjoyed this meal made with couscous… Haha ! I wish . 😅 in my dreams lol .  When you hear Hawaii what comes in mind ? Coconuts ! Yes sir . Pineapples! Yes ma’am . I tried this recipe thinking of what to do with my left over coconut milk I used for my baby’s new porridge recipe trial .

Yields 4 servings

Ingredients
1 1/4 cups couscous

1 small size pineapples or enough pineapples as wanted
1/2 cup water
1 tablespoon olive oil , optional
1 cup coconut milk
1 tablespoon chopped almonds

1 tablespoon dried cranberries

Directions
Bring water and coconut milk to a boil on low-medium heat 3 to 5 minutes.In a mixing bowl, place couscous, oil and a pinch of salt, pour the boiling liquid over and mix well, let sit for 10 minutes. Stir in chopped almonds  and dried cranberries and pineapples and serve. P.S if you are in Kumasi , you can get couscous from Melcom . Dried cranberries from the health shop right after European market Adum or adjacent to the high court and coconut milk from max Mart , asokwa , inside the ark building or Nashville at Daban (shares wall with Fedility Bank)
