Spinach mushroom balls 

Neatballs as vegans call it is meatballs in the non vegan world. I really really enjoyed it 😋 and am sure you will do same. But honestly I didn’t measure my ingredients. Typical in an African home but it comes out just perfect. So I will try and give you some sort of estimated ingredients measurements. Lol 🙈

 All you need is : 
2 handfuls mushrooms. (I used dried chinese type but any will do ) 
1 tsp nutmeg powder 
1 tsp oregano 
Salt to taste
Flaxseed meal or mashed banana to bind. Non vegans can use eggs (2) 
Bread crumbs 
2 cups of spinach 
1 clove garlic 

Method:

Boil mushrooms for 3 to 5 mins on medium heat . 

Drain water . In a food processor (if you don’t have one use blender but make sure your ingredients especially the mushrooms and others are chopped in smaller bits) Add your mushrooms, salt , oregano , nutmeg powder, chopped spinach , chopped garlic and about 3 tablespoons bread crumbs. Process or blend. 

 

initially tried with blender but was too though so i went in with my food processor
 
Once it has been mashed or blended well , with clean hand , take a piece of the mixture and fold it into a ball shape and mould in a bowl or plate of bread crumbs. Keep mounding until is well coated with the crumbs

  
  
Deep fry in olive oil until golden brown or oven bake for 20 to 30 minutes .  I tried both methods and it worked 😋

  
Enjoy in tomato sauce or stew . Try it with dips too.
